Can you use cancel on a creature?

No. A “spell” is something that is in the process of being cast, while it is on the stack. A card in your hand, or on the battlefield, or anywhere but the stack, is not a “spell”, so Cancel cannot target it. I think you need to understand what we call “stack”.
Can you block a sorcery in Magic?
Yes, you can counter it. Use Negate, Dissolve, et cetera. Note that this doesn’t really help that much against the first-turn Thoughtseize unless you’ve got access to a counterspell that doesn’t cost any mana, like Mental Misstep or Force of Will.

In the case of enchantment spells like Paralyzing Grasp, it attaches the enchantment to the target creature. An enchantment is a permanent, not a spell, so Cancel cannot be used on it.
How do you counter summon?
Counter-Summon (Su) He must identify the spell being cast as normal for counterspelling. If he does so, he can attempt to counter the spell as a swift or immediate action. To counter the spell, the counter-summoner must attempt a dispel check as if using dispel magic.
What happens when you cast a spell while blind?
(Most spells require line of effect, which should not be affected by being Blind.) Casting a spell in a location where there is no enemy (bad guess=invalid target) will waste your spell slot and do nothing. Spells with saves work a little better, since you don’t suffer disadvantage since there is no attack roll.

This question usually comes up when somebody wants to sacrifice one creature for two different things, or wants to discard cards to one effect and also use them to activate some other ability. The short answer is “no.” If you have Ember Haulerand Goblin Grenade, you’re going to have to make a choice.
Do you turn creatures sideways before declaring attackers?
Players commonly rush into combat by simply turning creatures sideways to indicate they’re ready to declare attackers. In reality, there is a whole step of combat before you declare attackers, called the “Beginning of combat step.” You always get a chance to do stuff at that point before your opponent can declare attackers.
Can a blinded creature attack an unseen creature?
A Blinded creature may make a melee attack against an unseen creature if it knows or can guess what square it is in. You’ll have disadvantage on the attack roll unless you are otherwise granted advantage (such as if the target is also Blind). Note that grapples don’t have an attack roll and so you wouldn’t actually be at a disadvantage.
